Veggie Bowl
Ingredients (serves 1-2)
• 1 handful quinoa
• 1 red pepper, chopped
• 1-2 handfuls spinach
• 2-3 mini broccoli florets
• 1/2 red onion, chopped
• 1 handful sliced mushrooms
Instructions
1. Cook quinoa as directed on the packet. Leave to cool.
2. Add broccoli to a pan of water and bring to the boil. Simmer for 5-6 minutes.
3. Add peppers, onions, and mushrooms to a frying pan that is coated in coconut oil.
4. Stir-fry them for 8-10 minutes, add spinach and cook for a further 2 minutes.
5. Combine all ingredients in a bowl and enjoy!
