Vegetable Soup
Ingredients
• 2 tbsp olive oil
• 1 peeled and chopped onion
• 1 peeled and chopped garlic clove
• 1 peeled and chopped sweet potato
• 500g vegetables of your choice
• 1 litre vegetable stock
Instructions
1. Heat oil gently in a large pan.
2. Apart from stock, add all ingredients to pan. Simmer gently for 20-25 minutes.
3. Add stock, bring to the boil then simmer for 20 minutes.
4. Pour into blender, blend until smooth.
5. Serve and enjoy!
