Tomato Soup
Ingredients
• 2lbs tomatoes
• 1 onion, 1 carrot, 1 celery stick
• 2 tbsp olive oil, 2 tsp tomato puree
• Pinch sugar, 1.2 litres hot vegetable stock
Instructions
1. Wash ingredients. Cut tomatoes into quarters.
2. Peel onion and carrot and chop into small pieces. Chop celery.
3. Heat olive oil in a large heavy-based pan.
4. Add onion, carrot, and celery and keep on low heat for 10 minutes.
5. Add tomato puree, sugar and tomatoes and heat for 10 minutes.
6. Pour in vegetable stock and bring to the boil. Gently simmer for 25 minutes.
7. Pour soup into a blender. Blend until smooth. Serve and enjoy!
