Syrup Chicken Stir Fry

Ingredients (serves 4)

• 4 chicken breasts-sliced into strips

• 4 tbsp maple syrup, 3 tbsp rapeseed oil

• 1/2 cup pecan nuts-crushed

• 1 pinch salt, 1 pinch black pepper

• 1 tbsp ground cumin

• 1 tbsp cinnamon, 1 pinch pepper

• Juice of 1 orange

Instructions

1. Put 2 tbsp maple syrup in a bowl and pecan nuts in another.

2. Coat chicken in syrup and then in the crushed pecans. Sprinkle salt and black pepper on top.

3. Put rapeseed oil in frying pan on medium heat.

4. Add chicken to the pan and drizzle 1 tbsp syrup over. Cook for 5 minutes until chicken is no longer pink.

5. For the sauce, put the orange juice, cayenne pepper, cumin and remaining syrup in small pan and heat for 2 minutes.

6. Serve with stir-fried or green veg & rice. Enjoy!
