Sticky Honey Chicken Stir Fry
Ingredients (serves 4)
• 4 chicken breasts, cut into strips, 100g white or brown rice/quinoa
• 1 tbsp cornflour, seasoned with salt and pepper
• 1 tbsp honey, 1 tbsp soy sauce, 1 tbsp lemon juice
• 200ml chicken stock, 2 tbsp rapeseed oil
• 1 red pepper, chopped
• 1 green pepper, chopped
• 1 tsp finely chopped garlic
Instructions
1. Cook rice or quinoa as directed on the packet.
2. Toss chicken in the cornflour.
3. Mix honey, soy sauce, lemon juice and stock in a bowl.
4. Heat oil in a large frying pan and stir-fry chicken for a few minutes.
5. Add peppers and garlic and stir-fry for a few more minutes.
6. Pour honey mixture into the pan and simmer until chicken is cooked through.
7. Serve and enjoy!
