Salmon Stir-Fry

Ingredients (serves 4)

• 4 salmon fillets

• 100g white or brown rice/quinoa/noodles

• 2 red peppers, chopped

• 1 bundle of asparagus

• 2 tbsp soy sauce

• 1 tbsp ginger

• 2 tbsp honey

• Pinch dried chilli flakes

Instructions

1. Cook rice/quinoa/noodles as directed on the packet.

2. Mix soy sauce, chilli flakes, ginger, and honey in a bowl.

3. Add salmon to mixture and coat fully.

4. Stir-fry salmon for 3-4 minutes each side on medium heat.

5. Add asparagus and peppers to pan for 2-3 minutes.

6. Serve and enjoy!
