Prawn & Cashew Nut Stir Fry

Prawn & Cashew Nut Stir Fry

Ingredients (serves 2)

• 100g white or brown rice/quinoa

• 1-2 tbsp rapeseed oil, 2 tsp soy sauce

• 2 handfuls cashew nuts, 2 handfuls king prawns

• 4 onions-sliced, 2 garlic cloves-chopped

• 1 red chilli-chopped, 1 red pepper-chopped

Sauce

• 2 tbsp soy sauce, 2 tsp lime juice, 1 pinch caster sugar

Instructions

1. Cook rice as directed on the packet.

2. Mix sauce ingredients in a small bowl and set aside.

3. Put cashew nuts in frying pan and toast over low heat for 2 minutes, turning frequently. Coat nuts with soy sauce and cook for further 1 minute.

4. Remove nuts from pan. Stir-fry prawns, peppers, onions, garlic, and chilli.

5. Add cashew nuts and sauce and heat through.

6. Serve and enjoy!
