Ingredients
• 2 eggs
• 1 tbsp rapeseed oil
• 1/2 onion, chopped
• 1 cup sliced mushrooms
• 1 sliced tomato
• Mixed herbs
• 1 handful spinach
Instructions
1. Heat the rapeseed oil in a small frying pan and add mushrooms and onions.
2. Whisk eggs in a bowl and add mixed herbs.
3. Pour eggs into the pan, tip pan slightly until eggs are set.
4. Add tomato and spinach to pan for 1 minute.
5. Serve and enjoy!
