Nutty Noodles
Ingredients
• 1/2 cup peanut butter
• 2 garlic cloves, chopped
• 1 tbsp coconut oil
• 1/4 cup almond milk
• 1/4 cup chopped peanuts
• 1 green pepper, sliced
• 1 handful spinach
• 2 tbsp soy sauce
• White or wholemeal spaghetti
Instructions
1. Cook spaghetti as directed on the packet.
2. Put coconut oil and pepper in frying pan and cook for 3-5 minutes.
3. Add garlic and cook for a further 3 minutes.
4. Add almond milk, peanut butter, and soy sauce. Whisk until peanut butter dissolves.
5. Add spinach and peanuts and mix well.
6. Add pan contents to spaghetti in a bowl and mix well. Enjoy!
