Mushroom & Broccoli Stir-Fry
Ingredients (serves 4)
• 20oz sliced mushrooms (shitake or chestnut)
• 10oz tender-stem broccoli, 100g unsalted cashew nuts
• 2 inch ginger chopped, 2 cloves garlic chopped
• 1 tbsp coconut oil, 1 tsp chilli flakes
• 2 tbsp oyster sauce, 2 tbsp soy sauce
Instructions
1. Put stock cube in a saucepan, add boiling water & stir to dissolve. Add broccoli & simmer for 2 minutes before draining.
2. Spray a frying pan with oil and heat over a low heat. Add cashew nuts and toast until golden. Add 1 tbsp of soy sauce, stir for 1 minute then set to one side.
3. Melt coconut oil in large frying pan/wok & stir fry mushrooms for 2-3 minutes.
4. Add garlic, ginger and chilli flakes & stir fry for 1 minute.
5. Add broccoli, soy sauce and oyster sauce & stir fry for 2-3 minutes then mix in cashew nuts.
6. Serve with rice or noodles and enjoy!
