Mighty Muffins

Ingredients (for 12 muffins)

• 2 1/2 cups whey protein powder (flavour optional)

• 1 1/2 cups egg whites

• 3 tbsp almond flour, 2 tbsp ground flaxseeds

• 3 tbsp almond milk, 2 tbsp water

• 1/4 cup applesauce, 1/2 cup blueberries

• 2 tsp coconut oil

• 1 tbsp vanilla extract

• 1 1/2 tbsp. cinnamon

• 3 tsp baking powder

• 1 pinch sea salt

Instructions

1. Preheat oven to 180ºC.

2. Apart from blueberries, mix all ingredients well in a bowl.

3. Gently add blueberries to mixture.

4. Spoon mixture into muffin tin that has been coated with coconut oil.

5. Bake for 15-20 minutes.

6. Allow to cool and enjoy!
