Mexican Stir-Fry
Ingredients (serves 4)
• 4 chicken breasts, cut into thick strips
• 100g white or brown rice/quinoa
• 1 onion, chopped
• 2 red peppers, chopped & pack of stir-fry veg
• 3 tbsp chipotle paste
• 1x 400g can chopped tomato
Instructions
1. Cook rice as directed on the packet.
2. Heat oil in a large frying pan, fry chicken for a couple of minutes.
3. Add onions, peppers & stir fry veg.
4. Stir in chipotle paste for 1 minute.
5. Add tomatoes. Stir and bring to the boil.
6. Simmer gently for 10 minutes, stirring occasionally.
7. Serve and enjoy!
