Lime Rice Bowl
Ingredients
• 3 avocados, mashed
• 2 cups white or brown rice
• Juice of 3 limes
• 1 cup frozen peas
• 1 jalapeño pepper, chopped
Instructions
1. Cook rice as directed on the packet.
2. Add frozen peas to a pan of water. Boil for 5-6 minutes.
3. In a bowl, mix avocados, jalapeño, lime juice, and peas.
4. Add rice to the mixture and mix well.
5. Serve and enjoy!
