Lemon Chicken

Ingredients (serves 4)

• 4 chicken breasts, cut into cubes

• 100g white or brown rice/quinoa

• 1 red pepper, chopped

• Freshly frozen sweetcorn, 2 carrots finely sliced

• 2 tbsps cornflour, 1 tsp coconut oil

• 1 tbsp honey, 1 tbsp soy sauce

• 250ml chicken stock

• Juice of 1 large lemon

Instructions

1. Mix honey, lemon juice, stock and soy sauce in a jug.

2. Toss chicken in cornflour so it's coated.

3. Put rice on to boil for 5 minutes, then add sweetcorn.

4. Heat oil in non-stick frying pan and fry chicken until golden.

5. Add carrots and pepper and fry for another minute.

6. Pour stock into the pan and simmer for 5 minutes until chicken is fully cooked.

7. Serve and enjoy!
