Homemade Kentucky Chicken
Ingredients
• 1 chicken breast, cut into cubes
• 1 cup oats
• 1 egg
• 1/3 cup almond milk
• 1/4 cup frozen sweetcorn
Instructions
1. Mix egg and almond milk in a small bowl.
2. Coat chicken in the mixture then roll in oats until chicken is covered.
3. Coat frying pan in coconut oil, cook chicken for 3-4 minutes on each side over medium heat.
4. Boil sweetcorn in a small pan for 5-6 minutes.
5. Serve with sweet potato fries. Enjoy!
