Fish, Chips & Peas
Ingredients (serves 4)
• 4 x 150g cod fillets
• 4 sweet potatoes
• Juice of 1 lemon
• 1 pinch salt
• 1 pinch black pepper
• Freshly frozen peas
• 1 tbsp rapeseed oil
Instructions
1. Season fish with salt and pepper, squeeze lemon juice over.
2. Peel sweet potatoes, slice into strips and boil for 5 minutes.
3. Drain and drizzle rapeseed oil on top. Put in the preheated oven at 200ºC for 20-25 minutes.
4. Place fish on a separate baking tray in the oven for 15-20 minutes.
5. Boil peas for 5-6 minutes. Mush if desired.
6. Serve and enjoy!
