Fish in Breadcrumbs
Ingredients (serves 4)
• 4 x 150g cod loin
• 4 tsp green pesto
• 1 tbsp breadcrumbs
• 1 pinch salt
• 1 pinch black pepper
• 4 potatoes or sweet potatoes
• Freshly frozen sweetcorn
Instructions
1. Wash and peel potatoes/sweet potatoes and cut into chips.
2. Boil chips for 5 minutes.
3. Put non-stick foil on a baking tray, spread chips on tray and spray with oil. Bake in pre-heated oven for 25-30 mins.
4. Put fish on a lined baking tray & add tsp of pesto to each piece of fish.
5. Bake in the preheated oven at 200ºc for 15-20 minutes.
6. Boil sweetcorn in the pan with sweet potatoes for the final 5-6 minutes. Serve and enjoy!
