Coconut Chicken Bites
Ingredients (serves 2)
• 2 chicken breasts, cut into cubes
• 2 eggs
• 4 tbsp coconut oil
• 1/4 cup almond milk
• 1/4 cup oats
• 1/4 cup coconut flakes
Instructions
1. Combine eggs and almond milk in a small bowl.
2. Combine oats and coconut flakes in another small bowl.
3. Coat chicken pieces in the egg mixture and then in oat mixture so they are covered.
4. Put the chicken in a frying pan that is coated in coconut oil and cook on medium heat for 8-10 minutes, turning when needed until chicken is cooked through.
5. Serve with your preferred green veg and enjoy!
