Chickpea Salad
Ingredients (serves 2)
• 6 oz. chickpeas
• 2 handfuls baby spinach
• 1/2 cucumber, sliced
• 1/4 onion, chopped
• 6 cherry tomatoes
• 3 tbsp extra virgin olive oil
• 3 tbsp balsamic vinegar
Instructions
1. Combine all ingredients in a bowl, drizzling olive oil and balsamic vinegar on top.
2. Serve and enjoy!
