Chicken Teriyaki
Ingredients (serves 4)
• 4 chicken breasts cut into cubes, 16oz broccoli
• 2 garlic cloves chopped, 1 red pepper-chopped (optional)
• 2 tbsp olive oil
Sauce Ingredients
• 2 tbsp ginger, chopped
• 1/3 cup soy sauce
• 1/3 cup water
• 1/3 cup honey
• 2 tsp cornflour
Instructions
1. Mix sauce ingredients in a small bowl and set aside.
2. Coat large pan in olive oil, cook chicken on medium heat for 4-5 minutes. Add garlic and cook for another minute.
3. Put broccoli and peppers in the microwave for 2 minutes. Then stir-fry with chicken & garlic for 2-3 minutes.
4. Add sauce and stir through for 2 minutes.
5. Add broccoli and peppers. Mix well.
6. Serve with rice or quinoa and enjoy!
