Ingredients
• 1 chicken breast
• Lettuce
• 4 cherry tomatoes
• 1 red pepper
• 1 cucumber
• 1 onion
Instructions
1. Wash all ingredients.
2. Cut chicken breast into bite-sized pieces.
3. Coat a small pan with coconut oil and cook chicken until no longer pink.
4. Chop tomatoes, pepper, cucumber, and onion.
5. Combine ingredients in a bowl.
6. Eat or store in the fridge for tomorrow's lunch.
