Chicken Fajitas
Ingredients (serves 4)
• 4 chicken breasts, cut into cubes
• 1 tsp chili powder
• 1 pinch salt, 1 pinch black pepper
• 8 wholemeal tortilla wraps
• 1 onion, chopped
• 1 red pepper, chopped
• 1 green pepper, chopped
Instructions
1. Combine chili powder, salt, and pepper in a small bowl.
2. Coat chicken in spices and add to the frying pan that is coated in rapeseed oil.
3. Stir-fry chicken & onions on low-medium heat for 10 minutes until chicken is no longer pink.
4. Warm peppers and onions in the microwave for 2 minutes. Add to pan with chicken and cook for further 2-3 minutes.
5. Combine chicken, peppers, and onions in the wrap and enjoy!
6. Serve with homemade nachos and salsa dip.
