Chicken & Black Bean Stir-Fry

Chicken With Black Bean Sauce

Ingredients (serves 4)

• 4 chicken breasts, cut into cubes or slices

• Sliced mushrooms

• 8oz pack of mangetout

• 1 onion, sliced

• 2 cloves of garlic, chopped. 2-inch piece of ginger, grated

• 200g jar of black bean sauce

• 2-3 tbsp coconut oil

Instructions

1. Heat coconut oil in wok or frying pan.

2. Add chicken & onion and stir-fry for 5 mins.

3. Add garlic, ginger & mushrooms and stir-fry for further 3-4 mins.

4. Add mangetout & black bean sauce and stir-fry for further 2-3 mins, adding water gradually if needed.

5. Serve with rice & enjoy!
