Ingredients
• 2 1/2 cups quinoa, 4 1/2 cups water, 2 cups spinach
• 2 tbsp pesto sauce, 1 tsp salt, 2 tsp corn flour
• 16oz mozzarella cheese
• 12oz broccoli florets
• 3 salad onions, chopped
Instructions
1. Put quinoa and onions in baking dish.
2. In a mixing bowl, mix water, pesto sauce, corn flour and salt. Heat in microwave for 3 minutes.
3. Add mixture to baking dish then add spinach and 3/4 of mozzarella cheese.
4. Preheat oven to 200ºC and bake for 30-35 minutes.
5. Heat broccoli in microwave for 3 minutes.
6. Once casserole is baked, take out of oven and add broccoli. Mix in then add rest of the cheese on top.
7. Put back in the oven for 5 minutes. Serve and enjoy!
