Blueberry and Coconut Scones

Ingredients

• 1 egg

• 1/4 cup coconut oil, 1/4 cup sugar

• 1 1/2 cups almond flour

• 2 tbsp corn flour

• 1 tsp vanilla extract

• 6oz blueberries

• 1/4 cup shredded coconut

• 1 tsp baking powder

Instructions

1. Preheat oven at 180ºC. Line tray with baking paper.

2. Put egg, sugar and coconut oil in mixing bowl. Beat until mixed.

3. Add all other ingredients apart from blueberries. Mix well.

4. Gently mix blueberries into the batter & put on baking tray.

5. Bake for 10-12 minutes.
